How did three Mexicans and a guy from Philly end up serving fresh, authentic street food from Veracruz and Oaxaca in downtown Santa Fe? It was a long and winding road, with stops at some of Santa Fe’s best loved institutions that eventually led our partners to form a destination of their own. Before starting Tres Colores, the Sena brothers and Diaz worked at local favorites such as Vinaigrette, Il Piatto, the Coyote Cafe and Tomasita’s and apprenticed under James Beard award finalist Martin Ríos. Katz cut his culinary teeth back East, ending at the Italian eatery Upstares at Varalli before heading to the Southwest.
Hugo, Larry and Pedro came together during their 19-year careers at Whole Foods Market, where all three held positions in Store Leadership. Eager to share their passion for fresh foods, local providers, seasonal ingredients and the uniqueness of Southern Mexico, these four partners came together to bring Tres Colores to life.
